Not much happening around - just hot, hot, hot. Looking for some storms this weekend to cool things down. We're heading to the boat for a relaxing weekend in the rain with Sharon and Buddy. Hopefully, we'll see sunshine on Sunday.

Finally have gotten around to posting photos from the "Graduation Trip". These are Rob's friends - here they are on the pier in Beaufort. Most of the photos are self-explanatory -

Last week we went out on the lake with our visitors on the pontoon "party boat". Had a great time - it was cool and overcast. Found a cool rope swing on the bank, so, of course, we had to stop and re-live our childhoods at the river!


And here's a blurry shot of the man-cub on the "Big Bertha" tube - you get the idea....

I forgot to include this photo .... my sister is coming to visit from North Dakota Wednesday. Their family will be with us for Robert's upcoming Eagle Scout ceremony. I've got to provide all the refreshments after the ceremony - and, of course, I'm going to have my "garbage cookies" as well as other goodies.

In order to provide T with "vegan" treats, I'm going to attempt "Vegan Garbage Cookies". Here are the items I picked up to make sure I'll be able to cook for her this coming week. Hope this turns out well!


Karen’s Garbage Cookies VEGAN for T

1 cup Shortening (Substitute Smart Balance)

¾ cup Dark Brown Sugar

¾ cup White Sugar

2 Eggs (Substitute 2 TBLS Flax seed meal & water)

2 Tbs Vanilla

1 ¾ cup Self Rising Flour

2 Tbs Wheat Germ

2 cups Old Fashioned Oatmeal

1 pkg Chocolate Chips (Substitute Vegan Chips)

½ cup Raisins

½ cup Chopped Nuts

½ cup Shredded Coconut

Preheat oven to 325 degrees.

Mix shortening and sugar. Add eggs and vanilla. Add flour, wheat germ and oatmeal.

mixture will be very thick. Add remaining ingredients & mix.

Bake for about 15 minutes until edges are barely brown. The center

will be slightly soft. Remove from the oven and allow to stand on

the cookie sheet for a minute or two. Cool completely on wax paper.
The hangar was ready for the celebration the night before.....



Graduation day is finally here! This is Carmichael Auditorium at UNC Chapel Hill....hot, stuffy and the PA system didn't work very well.

Anyway, we now have a high school honors graduate!!
I think he's just happy that it's over!

So is mom!


We had a really nice picnic at the hangar in honor of the graduate!


We forced him to give a speech.....then he was off for a short nap before he went over to the high school for the "Project Graduation" all-night lock-in.

My neighbor gave me a huge Chinese cabbage. It was about 2' around. I removed the outer leaves and cooked them. The remaining head you see here went into the fridge for use in a slaw/salad that I'm going to make for Robert's graduation cookout.

I also made some garbage cookies for a get-together Thursday. Hey, I'm lazy - I know the recipe without looking - and I always keep the ingredients on-hand. Everyone seems to like them.

The first Saturday in June is always hectic - the Asheboro Airport always has a fly-in/airshow on that date. So, I flew over Saturday morning to help out. You can see from the sky that we're finally going to get some of the extremely needed rain....it was a good fly-in - about 60 planes came and the public enjoyed a nice, overcast day. Sometimes, this show is dreadfully hot - walking around on the pavement in 90+ degrees is pretty painful!

Then, I flew back to the house to get ready for the other yearly event that happens on the first Saturday of June - Steve and Gretchen's costume/theme party at the other end of the runway. As you can see, this year's theme was Pirates! ARRGGGHH!!

They had a judging of all the costumes - image that - 40 adults playing dress-up. Duane didn't come forward for the judging - just a little too much for him, I think!

Here's Pat and Diane - their costumes were great, as usual. Diane spends ALOT of time on them.
A good time was had by all - here's Dick (my garden friend), Lindy and Diane having a threesome dance.





Gotta run- time to buckle down and get some things done for this coming weekend!!!!
