Yummy vegan meal

I went to Sam's yesterday to get tires put on Duane's car.....and since I had a couple of hours to kill, I went across the street to the Chinese Global Market - really feels like you're in China in that store!!!

I came back with a bunch of goodies and used some of them tonight to make a nice hearty curry.

All the ingredients - chopped veggies -  baby bok choy, mushrooms, celery, carrots, onions - and tofu cubes fried  in dark sesame oil.


 The sauce was just a can of coconut milk, curry powder, soy sauce, a bit of sugar and chili pepper paste.



Layered on top of the wilted bok choy  and served!  It was really yummy....
